Could staff be expected to work across multiple academies when they join a Multi Academy Trust (MAT)?

When your school joins the MAT your contract will be with the MAT (via TUPE Regulations). Subject to your contract, staff could potentially be deployed across the different academies with a view to raising standards and securing economies of scale.
